Weigh-in Wednesday and Paleo Update

Happy Wednesday Everyone! Are you ready for it? This is what I saw on the scale this morning:

In case you don't remember, my weight last Wednesday was 165. That means a nearly 9 lb weight loss in a week! It also means that I have passed my 20 lb weight loss mark for a total lost of 23 lbs! Can you tell I'm excited? This just makes it all worth it. I even had someone at work this morning ask me if I'd lost weight. (Queue big cheesy grin) Why yes, yes I have thank you for asking. Much better than having someone ask me when I was due when I wasn't pregnant. (That really happened a few years ago).

It is crazy to me that I have lost this much weight in a week and I owe it all to what I've been eating or not been eating, shall we say. Let's just recap my week. Thursday night I went grocery shopping (yes, after I drove back and forth from Topeka). I didn't have a list or planned out meals, just an idea in my head of what I wanted to buy. I wish I was a planner, it would make my life so much easier, but I'm not and I never will be. I bought lots of fresh fruit and veggies. I even got a squash, which Jason wasn't too sure about. I also bought ground turkey, chicken breasts, extra lean ground beef and frozen tilapia filets. Oh, and some frozen shrimp. All in all, I spent $200 and I did not get one boxed item at all. The lady that checked me out even commented on it.

Now here's where meal planning would have come in handy. We weren't really sure what to make for meals. I have been perusing the books that we got as well as the internet. Fortunately, there are a ton of recipes on the web (of course). Just to give you an idea though, here are a few meals that we've had so far. Please enjoy my fabulous photography skills.
Spinach salad with grilled salmon
Pork chops with Squash
Chicken and vegetable soup
Meatloaf and mashed cauliflower

A word on the mashed cauliflower. I wanted to like it. I wanted it to be a great substitute for mashed potatoes. It wasn't. It still tasted like cauliflower and had the consistency of Malt-o-Meal. I was deceived by this picture on Pinterest and the Biggest Loser recipe. All lies.
Eating like this has been a challenge, but I think it will only get easier. I need to get some Almond flour and coconut milk so I can make more bread-like recipes. I think that will help. I do miss cheese, though. Jason is having a really hard time of it. He's already wanting to cheat and have pizza, even though he is losing weight as well. However, he has just quit a serious soda habit and he has much bigger issues with food addiction than I do. Maybe I can convince him to write a guest post after he stops being so crabby.

Since this has gotten rather long, I'll post tomorrow on some of the effects (other than weight loss) that I've experienced since starting this eating plan.
